Tom Collins Recipe

Gin • Lemon • Sugar Syrup • Soda. London dry gin topped with freshly squeezed lemon and soda. Serves 1, in a collins glass.

Ingredients

  • 45 ml gin
  • 25 ml lemon juice
  • 15 ml sugar syrup
  • 60 ml soda
  • ice

Method

  1. Shake gin, lemon and sugar syrup with ice.
  2. Strain into a tall glass over fresh ice.
  3. Top with soda.

Serving tip

Garnish with a lemon wheel. Add the soda last to keep it lively.

Prep ahead and variations

Measure the spirit with a jigger, chill the glasses and cut garnishes shortly before service. Juices, purees and syrups can be measured and chilled a few hours ahead, which keeps service quick. Fresh garnishes should look bright, and clean, plentiful ice is the quiet hero of every glass. Taste before serving and adjust sweetness or acidity to suit the day, because fruit varies by season. Variation: Swap the lemon for lime and the soda for tonic for a crisper cooler.
